You know how R stands for Thursday on class schedules? Well that's the inspiration for Recipe Thursdays. That, and someone on Twitter recently suggested that we start tweeting Metromint recipes. Welp, here we go!
First recipe to share is inspired by summertime: cool off with this refreshing, minty treat!
Metromint Mojito Ice (non-alcoholic)
1 C fresh squeezed organic lime juice
2 ½ C Metromint peppermint water
½ C organic sweetener (e.g. sucanat or raw agave)
2 T organic lemon juice
1 ½ t flax oil
1 ½ t unfiltered, cold pressed coconut oil (slightly softened)
¼ C fresh mint leaves
Bring all ingredients to room temperature. Combine all ingredients except fresh mint in blender at high speed until completely blended. Add fresh mint and pulse blender until mint is in very small pieces. Pour directly into a container adequate for freezing. Place in freezer.
After an hour, break the top layer of ice and remix, then allow to freeze until solid. When ready to serve, let ice sit at room temperature for 15-20 minutes. Break apart and crumble. Enjoy!
